Quick and Easy Granola Recipe
If you read my frozen yogurt bark recipe over the summer, you'll know that my favorite pantry staple is granola. Lately, instead of going the store-bought route, I've been taking the time (which is really no time at all!) to make my own home-made batch (recipe adapted from Pro Home Cooks).
I love that I can level-up this recipe based on what I am craving, and with Fall upon us that means a warm sautéed apple mix that gives off all the fall vibes.
But don't get me wrong...this recipe (below) is beyond good enough on it's own to snack, spoon and sprinkle your way though the work week.
Ingredients:
3 cups of rolled oats
2 cup of coconut flakes
1/4 cup sliced almonds (optional)
1/4 cup hemp seeds
1/2 cup coconut oil
1/8 cup quinoa
1/4 cup raisins
1/2 cup maple syrup
Pinch or two of salt
A few dashes of cinnamon
2 apples peeled and chopped into small pieces
Instructions:
In a large bowl combine all the dry ingredients (except for raisins).
In a pot (or microwave) heat up the coconut oil, maple syrup, salt, and cinnamon. Once melted and cooled, mix in with your dry ingredients.
Toss so that everything is coated with the mixture, then spread on a sheet pan and place in the oven at 275 F for 45 minutes. Check periodically to ensure granola is browning, not burning!
Once removed from oven, cool and toss in your raisins.
Store in an airtight container.
If your'e craving a Fall-inspired treat, sauté apples in coconut oil and cinnamon and serve with the granola. Enjoy!
